Sauce Espagnole is one of the classic brown sauces that form the basis of many brown sauces. The sauce is a decoction of beef bone with tomatoes and herbs that has been reduced and thickened. Sauce Espagnole is one of Escoffier’s five mother sauces and has been used as a base in both French and Spanish cuisine since the 20th century, after which it has spread throughout the world. Try e.g. to reduce the Sauce Espagnole to two-thirds and flavor with, for example, blue cheese, currant jelly, OSCAR® Game Fund concentrate and juniper, you have a perfect game sauce. Depending on the type of game/season, you can build on the sauce with, among other things, blueberries, lemon or wild mushrooms.
